Abstract

This study examines the transformation of döner kebab, from a local food to a globally widespread product, within the context of gastronomic identity. It is observed that döner kebab, originating in Turkey and influenced by globalization dynamics, has been transported to different geographies, particularly through migration movements to Europe, and has undergone formal and thematic changes in these new contexts. During this process, döner kebab continues to reference its local cultural roots while simultaneously differentiating itself according to the tastes, consumption habits, and socio-cultural structures of the societies in which it is consumed. The research adopts a qualitative research approach and utilizes content analysis. In this context, the historical development of döner kebab, its migration to Europe, and its reshaping, particularly in Germany, into a distinct gastronomic product are analyzed through the literature. The findings reveal that döner kebab is more than just a food; it exhibits a multi-layered structure related to concepts such as cultural representation, identity construction, and belonging. Furthermore, it is understood that döner kebab acquires different meanings depending on the context in which it is produced and consumed, thus creating a "hybrid" gastronomic identity. In conclusion, it can be said that the transformation that döner kebab has undergone in the process of globalization points to a dynamic identity construction shaped by the interaction of local and global elements. In this context, döner kebab can be considered both as one of the representations of Turkish culinary culture in the international arena and as a concrete example of migration, cultural interaction, and reproduction processes.
