Abstract
Gastronomy is an inseparable part of human life. Contextualizing this fertile field of gastronomy beyond the specific disciplines - to multidisciplinary perspective - the main objective of this study is to reveal a wider view of this field through different disciplines and aims to feed it. This study contributes by providing insights into the future development and relevant studies in gastronomy as an ever-developing discipline. The research area of this study is graduate theses in Turkey, involving at least one chapter related to gastronomy issues from any discipline. Thus, 189 theses were determined and, evaluated with bibliometric analysis. In this study, a different and also wider view of gastronomy was suggested, apart from those of business and/or tourism context. Among the important results of this research, it was determined that the number of theses has increased by 2006; most of the theses were produced in Gazi University, the theses are prepared in 44 different departments, and, in general, together with kitchen, culture, nutritional issues, a considerable amount of subject differentiation was observed.
Özet
Gastronomi, insan yaşamının ayrılmaz bir parçasıdır. Bu çalışmada, gastronomi gibi zengin bir alanın, belirli disipliner sınırların ötesinde, çok disiplinli bir yaklaşımla ele alınarak, alanı besleyen farklı disiplinler ve eğilimler ile daha geniş bir görünümü ortaya koyulması amaçlanmıştır. Bu çalışmanın, henüz gelişmekte olan gastronomi için gelecekteki gelişimi ve ilgili çalışmalara fikir vermesi açısından katkı sağlayacaktır. Araştırma alanını Türkiye’de tamamlanmış, en az bir tam bölümünde gastronomi ile ilgili konulara yer verilen tüm anabilim dallarındaki tezler oluşturmaktadır. Buna göre araştırmaya uygun olduğu saptanan 189 lisansüstü tez, bibliyometrik analiz ile değerlendirilmiştir. Bu araştırma ile genel olarak, gastronominin turizm ve işletme bağlamından farklı ve daha geniş bir görünümü ortaya konmuştur. Araştırmanın önemli sonuçları arasında, 2006 yılından itibaren tez sayısının arttığı, en çok tezin Gazi Üniversitesi’nde üretildiği, tezlerin 44 ayrı anabilim dalında hazırlandığı, genel olarak mutfak, kültür, beslenme konularıyla birlikte önemli oranda konu çeşitliliğine rastlandığı yer almaktadır.
