Abstract

In this study, it was aimed to bring to light the unpleasant odor in the samples of the chicken meats obtained from a national poultry producer firm. It was used a total of 28 samples consisting of 4 packaged and 20 unpacked whole chickens and 4 cut up chicken meats. The qualitative analysis carried out consecutively by steam distilation of the samples and Fujiwara's test on the distilates of skin and muscles. The test results were negative for the packaged whole chicken and muscle samples, whereas that of the unpacked whole chickens and cut up chicken meats were positive. According to the results of comparable test performed with different halogenated industrial solvents for differential diagnosis, it was concluded that the reason of the contamination that caused the unpleasant odor at the chicken samples arised from an industrial solvent called thinner.
