Abstract

Introduction: Nutrition is a key factor that directly affects individual health, and the accurate and detailed analysis of food consumption records is essential for developing effective nutritional therapy. In addition to traditional diet analysis methods, artificial intelligence (AI)-based tools have recently begun to be utilized in the field of nutrition and dietetics. Material and Methods: This study compared the energy and nutrient analysis results of a daily sample menu, recommended for a healthy 42-year-old woman by the Turkish Dietary Guidelines, across four different AI systems—ChatGPT-4o, Google Gemini (Version 2.5 Pro), DeepSeek, and Microsoft Copilot and two reference diet analysis programs: ASA-24 (Version 2024), developed by the U.S. National Cancer Institute, and the Turkish Nutrition Information System (BEBIS, Version 9.0). Each AI system generated energy and nutrient analyses based on the same dietary plan, and the data were structured in Microsoft Excel format. The same plan was also analyzed using BEBIS and ASA-24 to obtain reference values. The data were organized by nutritional parameters (e.g.,energy, protein, fat, carbohydrates, vitamins, and minerals) and aligned in columns. For each nutrient, the difference between each AI system’s output and the corresponding BEBIS and ASA-24 values was calculated to evaluate systematic deviations. The distribution of these differences was assessed using the Shapiro-Wilk normality test, which indicated nonnormal distribution in all cases (p <0,05). Due to the violation of normality assumptions, the non-parametric Wilcoxon signed-rank test was applied to determine whether the AI system outputs differed significantly from the reference systems. Test statistics and p values were reported in tabular format. Results: This study compared the nutrient estimates of a sample menu from the Turkish Dietary Guidelines obtained using different AI tools (ChatGPT-4o, Copilot, Gemini, DeepSeek) and conventional systems (ASA-24, BEBIS). Gemini was found to be the most consistent AI, showing no significant differences when compared to BEBİS and ASA-24 (p=0.526 and p=0.529, respectively). Discussion: In this study, nutrient analysis results of a sample daily menu from the Turkish Dietary Guidelines were compared between multiple AI systems and the widely accepted reference methods, BEBIS and ASA24. The findings revealed that three AI systems (ChatGPT-4o, Copilot, DeepSeek) showed statistically significant differences in nutrient estimates compared to the reference tools, whereas Gemini was the only system that produced comparable results to both BEBIS and ASA-24. This underscores the necessity of careful and controlled application of AI technologies in nutrition and dietetics. The consistency observed with Gemini suggests its potential applicability in future nutrition analysis tasks. However, the discrepancies seen in other AI systems may stem from differences in nutrient databases, model training data, and food recognition algorithms. Conclusion: While AI-assisted tools offer promising capabilities in dietary assessments, their accuracy and reliability can vary significantly between systems. Thus, cross-validation with reference databases and expert review of outputs remain essential. Furthermore, broader and more systematic studies are needed to promote standardization in AI-based nutrient analysis.
