Abstract

This study aims to provide an in-depth examination of the perceptions of undergraduate students enrolled in a food and beverage management program regarding the food and beverage departments of hotel enterprises. For this research, a total of four focus group interviews were conducted with twenty-four undergraduate students (fifteen females and nine males) attending the Department of Food and Beverage Management at the Faculty of Tourism, Aydın Adnan Menderes University. The findings indicate that while the culinary department has acquired prestige due to media influence, the service department is still not perceived as a highly respected field. Long working hours, inadequate hygiene in staff accommodations, and low wages emerged as the primary demotivating factors. Despite the relative ease of accessing employment, other notable findings include the prevalence of nepotism over meritocracy in promotion processes, as well as the existence of sexist discourse and workplace mobbing. Academically, this study is significant because it addresses a gap in a literature predominantly characterized by quantitative approaches by utilizing the focus group method, which is less frequently preferred by researchers. Furthermore, it holds practical significance for the industry by enabling sectoral decision-makers to access students' thoughts about the sector firsthand, thereby increasing their awareness regarding these perceptions.
