Abstract
Gamma-oryzanol is an important bioactive compound, and its main source is rice bran. In this study, the chemical structure, sources, physiological effects, uses and toxicity of gamma-oryzanol, the methods of its determination and effect of processing on gamma-oryzanol were reviewed.

Gama-orizanol önemli bir biyoaktif madde olup, temel kaynağı pirinç kepeğidir. Bu makalede gama-orizanolün yapısı, kaynakları, fizyolojik etkileri, kullanım alanları, tayin metotları, işleme metotlarının etkisi ve toksisitesine ait bilgiler derlenmiştir.
