Abstract

The subject of this study is a group of Middle Byzantine Period glazed chafing dishes finds recovered during the Amorium excavations. Many pottery vessels with different functions were used in the preparation, storage or serving of various foods in the Byzantine culinary culture. Chafing dishes constitute a group of these vessel types. Chafing plates are used to serve fish sauce, also known as garum, garos and liquamen, or different kinds of foods by heating them hot. As in the Amorium excavations, the fact that such chafing plates are less frequently encountered among the ceramic finds in Anatolia and other excavations outside Anatolia indicates that these vessels may have been used by elite groups. The chafing plates in this study, consisting of 23 pieces, were found in the BBD and Enclosure located in the Lower City part of the city and in the Basilica B area located in the Upper City section. The findings, which were introduced by considering the clay, glaze and form characteristics, were tried to be evaluated in the light of both the data in the areas they were unearthed and similar examples.
