Abstract

Medicinal and aromatic plants are widely used due to their secondary metabolite content, high antioxidant activity and many other biological activities. The metabolite contents and antioxidant activities of these plants are analyzed in scientific researches using extracts obtained from different organic solvents. However, hot water infusions of these plants are widely consumed by people as tea. In this study, it was aimed to determine the total phenolic content, flavonoid content and antioxidant activities of hot water extracts of mint (Mentha piperita), lemon balm (Mellissa officinalis), marshmallow (Althea officinalis), chamomile (Matricaria chamomilla ), green tea (Camellia sinensis), sage (Salvia officinalis). Total phenolic compound content was determined by Folin-Ciocalteu method and flavonoid content was determined by aluminum chloride method. Antioxidant activities were evaluated by free radical scavenging activity (DPPH.), ABTS·+radical scavenging activity and reducing power activity (FRAP) methods. Total phenolic content of the extracts ranged from 6,71 ± 0,29 to 89,82 ± 0,78 mg GAE /g dry tissue weight (DW). The highest total phenolic content was determined in green tea extract, followed by sage and mint extracts, respectively. The flavonoids concentrations of the extracts ranged from 0,29 ± 0,001 to 0,96 ± 0.014 mg QUA/g DW. The highest flavonoid content was determined in sage. The highest antioxidant activity was determined in green tea, mint and sage extracts. The lowest values in terms of both metabolite and antioxidant activity were determined in chamomile and marshmallow extracts.
