Abstract

Oleuropein, a bitter-tasting secoridoid glucoside commonly found in leaves of the olive tree as well as in olives Olea europea L. with a higher concentration as compared to other bitter-tasting compounds. For direct consumption these bitter tasting compounds must be hydrolized to simple nonbitter coumpunds. Oleuropein can be hydrolized by ß-glucosidase EC 3.2.1.21 . In this study, ß-glucosidase was used to hydrolize oleuropein for the formation of ecotechnological approach for green table olive production method and physical, chemical, microbiological analyses and sensory evaluation were performed. Microbial growth was favored and acceptable final product was obtained with an 0.250.50% enzyme concentration range

Özet

Oleuropein, yaygın olarak zeytin ağacı yaprakları ve zeytinde Olea europea L. bulunan acı tatta sekoiridoid glukozid'dir ve zeytin bünyesinde diğer a c ı l ı k u n s u r u b i l e ş i k l e r e o ra n l a y ü k s e k konsantrasyonda bulunmaktadır.
