Abstract

In this study, probiotic yogurt was manufactured by using yogurt starter culture and probiotic bacteria (Lactobacillus acidophilus ATCC 4356) at different incubation temperatures (37, 42 and 45°C) and final incubation pH values (4.8, 4.6 and 4.4). The probiotic yogurt samples were stored at 4°C for 30 days. At the final stage of the storage period, syneresis, hardness and viscosity values of probiotic yogurt samples increased. The highest viscosity and hardness values were determined in probiotic yoghurt samples produced at the incubation temperature of 45°C and the lowest syneresis values were determined in the probiotic yoghurt samples produced at incubation temperature of 37°C.The viability of L. acidophilus in probiotic yogurt samples and viscosity values of probiotic yogurt samples decreased as the final incubation pH was increased. Although the viability of L. acidophilus in probiotic yogurt samples was adversely affected with increasing incubation temperature, L. acidophilus count in probiotic yogurt samples was >= 107 cfu/g during all storage period.
