Abstract

Objective: Tahini, produced by crushing dehulled and roasted sesame seeds, is a very popular food in the Middle East, North Africa, Turkey and the Balkans. Tahini has a rich content of some macro and micro nutrients such as oil, protein, lignans and tocopherols. However, tahini is not preferred by some consumers due to its high oil content. In this study, tahini with medium and low fat content was obtained by reducing the fat content of tahini by centrifugation, and some physical and chemical properties were determined in comparison with natural tahini. Materials and methods: The tahini used in the study contains 59% oil and the oil content of the reduced-fat tahinis were reduced by 5, 10 and 15%. Sensory properties of tahini samples were evaluated by trained panelists. Physical stability, viscosity, color coordination values, protein and fat ratio were determined by analytical methods hereas the carbohydrate ratio and total calorie values in the samples were calculated. Results and conclusion: It was determined that the total caloric value of the reduced-fat tahini samples was 2.57, 4.85, 7.14% lower than the control sample, respectively. According to the sensory test results, the best scores were obtained for the sample with a 10% reduced fat content. While the L* values decreased with the reduced fat content, the a* and b* values increased. Again, with the reduced fat content, the protein ratio and physical stability values, as expected, gradually increased with the removal of fat, and the viscosity, which supported the higher scores given to the reduced-fat tahini samples in the spreadability test. As a result, it was revealed that reduced-fat tahini is a good alternative to traditional tahini with its low calories and better spreadability properties.
