Abstract

This study on lung stew, an important part of the Gaziantep cuisine, aims to assess its cultural sustainability by thoroughly examining the production and consumption practices of the dish. Within the scope of the study, semi-structured interviews were conducted with 12 participants who produce lung stew in Gaziantep. The interviews focused on key themes such as the master-apprentice tradition of learning, the history of the dish, preparation stages, ingredients and equipment used, presentation style, hygiene and health issues, differences from other dishes, awareness outside the region, gastronomy tourism potential, and recommendations for transmission to future generations. Content analysis revealed that knowledge of lung stew is passed down between generations through family and master-apprentice relationships, and that while the dish was once a “poor man's food” consumed to fill stomachs in times of scarcity, it has now become one of Gaziantep's iconic flavors. It was observed that small animal lungs and other offal are used in the preparation of the dish through a multi-stage cooking technique, and that unwanted odors are eliminated and a unique flavor is achieved thanks to specific tricks. The fact that lung stew is served as a wrap between warm bread and consumed as an appetizer before kebabs reveals that it is a gastronomic ritual unique to the region. It has been emphasized that the dish can be consumed safely thanks to hygienic preparation and re-boiling processes, and that it is nutritious due to its high protein and vitamin content. The fact that lung stew is made entirely from offal and is economical distinguishes it from other types of stews and kebabs. It has been determined that although the dish is not yet widely known outside of Gaziantep, it is an attractive product for local and foreign tourists seeking an authentic experience. This study reveals the potential of a traditional dish for gastronomic tourism and the steps that need to be taken to preserve it as cultural heritage; it provides a unique contribution to the literature in the context of the sustainability of lung stew.
