Abstract

With the recent rise of the vegan diet, the preferences and expectations of vegan individuals in the culinary field have become increasingly important. Therefore, restaurants' service approach to vegan consumers is a significant issue for the development of the culinary sector. The primary objective of this study, designed with this perspective, was to assess the perspectives of vegan individuals on restaurants. A content analysis of 702 user reviews of 18 vegan restaurants identified on TripAdvisor was conducted, and almost all of the reviews were positive. As a result of interviews with 63 participants, it was determined that almost half of the participants found the food variety inadequate. The most common mistake in restaurants was the use of non-vegan products. Vegan versions of traditional cuisine have been observed to be a popular trend. Restaurants are advised to address information gaps to improve service quality. It was emphasized that public awareness should be raised to promote the vegan lifestyle. Finally, it was concluded that including traditional Turkish dishes on menus makes consumers happy.
