Abstract

Today, gastronomy has evolved into an interdiciplinary approach seeking solutions to global challenges such as food provenance, environmental impacts of production, and biodiversityconservation. As ‘farm to fork’ strategies gain importance, endemic species and geographical indication products stand out as critical components of sustainable food systems. The study aims to conceptually evaluate the Pearl Mullet (Alburnus tarichi), an endemic species unique to the Lake Van basin, within the context of sustainable gastronomy and geographical indication. The research was conducted using a qualitative, literature-based methodology examining sources on sustainable gastronomy, endemic species, and traditional preservation methods. The species’ endemic nature, seasonal migration cycle, role in local culinary culture, and traditional salting practices were analyzed in relation to sustainable gastronomy principles. The study concludes that evaluating the Pearl Mullet within the scope of the geographical indication system holds significant potential for preserving local gastronomic knowledge, ensuring the sustainability of traditional production and preservation methods, and supporting local development. In this respect, the study offers a conceptual contribution to the sustainable gastronomy literature regarding seafood and endemic species.
