Abstract

Bovine spongiform encephalopathy (BSE) has been one of the most interesting subjects of science since 1986. It was estimated that the approximate number of the infected animals which were entered to human food chain was between 840.000-1.250.000. Tissues of central nervous system (CNS) such as brain and spinal cord which are classified as specified risk materials (SRM) are regarded to be the main source of infection. Contamination of beef with central nervous system tissue has raised food safety concerns because of potential transmission of BSE to humans. Etiologically linked to BSE, the recent new variant Creutzfelt-Jakob disease (nvCJD) in human is thought to be associated with the consumption of beef derived from BSE infected animal. In this review, it has been presented about BSE- specified risk materials in meat and meat products.
