Abstract

In this study, the wheat flour samples purchased from markets and shops in Erzurum were analyzed for the presence of total aflatoxin, aflatoxin $B _1$ and ocratoxin A. The analyses for the toxins were conducted on a total 50 samples. ELISA method was utilized for the detection of the toxins. As a result, it was found that AF$B _1$ was detected in 37 (74%) of the 50 samples. The amount of AFB1 detected 8 samples (16%) was higher than amount permitted by the Turkish Food Codex. It was found that AF Total was detected in 37 (74%) of the 50 samples. The amount of AF Total detected 9 samples (18 %) was higher than amount permitted by the Turkish Food Codex. It was found that ochratoxin A was detected in 45 (90%) of the 50 samples. The amount of ochratoxin A detected 6 samples (12%) was higher than amount permitted by the Turkish Food Codex. In the statistical analysis, there was positive correlation (P
