Özet
Moleküler gastronomi ile yiyecekler orijinal formlarından çıkarak keşfedilen teknikler ile yeni formlarına kavuşmaktadır. Moleküler gastronomi ile tüketicilerin duyuları yanıltılarak, hayal güçleri zorlanmaya başlanmıştır. Beklediğinin üstünde menülerle karşılaşan tüketicilerin talepleri ve şeflerin yeni menüler yaratma isteği moleküler gastronominin ve mutfaktaki yeniliğin canlı kalmasını sağlayacaktır. Nouvelle mutfak akımı ile önem kazanan standart reçetelerin hazırlanması moleküler gastronomide geri planda kaldığı gözlemlenmiştir. Bir şefin hazırladığı reçetenin başka bir şef tarafından uygulanması zor olduğundan standart reçetelerin oluşturulması gerektiği düşünülmektedir. Bu araştırma ile moleküler gastronomide kullanılmakta olan "jelleştirme", "tozlaştırma", "köpükleştirme", "tat ve koku transferi teknikleri"nin duyusal analiz yöntemiyle incelenmesi ve bu tekniklere dair standart reçetelerin oluşturulması amaçlanmıştır. Deneysel araştırma yönteminin kullanıldığı araştırma sonucunda moleküler mutfakta standart reçete geliştirilmesine dair bir yöntem ortaya konularak, her bir teknik için birer olmak üzere toplamda dört standart reçete geliştirilmiştir
Abstract
With molecular gastronomy, food comes out from its original forms and new forms are discovered with the techniques discovered. Molecular gastronomy misdirected consumers' senses and challenged their imagination. The desire of consumers to meet men on expectations and the desire of chefs to create new menals will ensure that molecular gastronomy and innovation in the kitchen are alive. It was observed that the preparation of standard prescriptions, which is important with the nouvelle culinary tendency, was restored on the molecular gastronomy. It is thought that the prescription prepared by one chef is difficult to be applied by another chef, and standard prescriptions need to be created. In this research, "gelling", "pollenization", "foaming", "taste and odor transfer” techniques used in sensory analysis methods are investigated in molecular gastronomes and standard prescriptions for these techniques are aimed. A total of four standard recipes were developed, one for each technique, as a result of the research using the experimental research method.
