Özet

Ülke ekonomisi üzerinde olumlu etkilere sahip olan turizm sektörü içeresinde konaklama işletmeleri önemli bir yere sahiptir. Son yıllarda, özellikle tatil bölgelerinde faaliyet gösteren konaklama işletmelerinde yoğun bir şekilde uygulanan sistemlerin başında her şey dahil sistemi gelmektedir. Her şey dahil sisteminin konaklama işletmelerindeki yiyecek içecek bölümleri ve bu bölüm ile ilişkili birimlerin faaliyetleri üzerinde önemli etkileri olduğunu söylemek mümkündür. Bu bağlamda çalışmada, konaklama işletmelerinde kullanılan her şey dahil sisteminin yiyecek içecek bölümü ve yönetimine etkilerini belirlenmesi amaçlanmıştır. Bu amaçla, Türkiye'nin önde gelen turizm çekim merkezlerinden birisi olan Bodrum bölgesinde bir araştırma gerçekleştirilmiştir. Araştırmanın ana kütlesini Bodrum ve çevresindeki herşey dahil sistemini uygulayan dört ve beş yıldızlı oteller ve birinci sınıf tatil köylerindeki yiyecek ve içecek departmanlarından sorumlu yöneticiler oluşturmaktadır. Araştırmada veri toplama aracı olarak anket formları kullanılmış, anket uygulaması, belirlenen konaklama işletmelerindeki yiyecek-içecek bölümünden sorumlu yöneticiler ile yüz yüze görüşülerek gerçekleştirilmiştir. Çalışmadan elde edilen veriler, frekans analizleri, Kruskal-Wallis ve Mann Whitney U testleri ile analiz edilmiştir

Abstract

Accommodation business has an important place in the tourism sector, which has positive effects on the country's economy. In recent years, the all-inclusive system has been at the forefront of the types of pensions that are heavily used in accommodation enterprises operating in the region of the countryside. It is possible to say that the all-inclusive pension system is a significant influence on the activities of the food and beverage departments of the accommodation enterprises and the departments associated with this department. In this context, it is aimed to determine the effect of the all-inclusive system used in the hospitality operations on the food, beverage and beverage division and management. For this purpose, a survey was conducted in the Bodrum region, which is one of the leading tourism attraction centers of Turkey. The main population constitutes the managers responsible for food and beverage departments in four and five star hotels and first-class holiday villages that implement the all-inclusive system in and around Bodrum. Survey forms were used as data gathering means in the survey, survey application was conducted face to face with the managers responsible for the food and beverage section of the accommodation enterprises. The data obtained from the study were analyzed by frequency analysis, Kruskal-Wallis and Mann Whitney U tests.
