Özet

Farklı coğrafyalardan gelen öğrenciler, kendi beslenme alışkanlıklarını sürdürmeye çalışırken yeni şehrin beslenme kültürüne uyum sağlamakta güçlükler yaşayabilmektedir. TÜBİTAK 2209-A tarafından desteklen bu çalışma, Kayseri’de öğrenim gören uluslararası üniversite öğrencilerinin beslenme durumlarının saptanması, Türk yemek kültürüne uyumunun değerlendirilmesi ve oryantasyonlarının sağlanması amacıyla yürütülmüştür. Mart-Mayıs 2016 tarihleri arasında yürütülen çalışma kapsamına, Kayseri iline en az bir yıl önce gelmiş olan 166 yabancı uyruklu üniversite öğrencisi alınmıştır. Öğrencilerin ülkemize geldikten sonra değişen beslenme alışkanlıkları ve genel beslenme durumları yüz yüze yapılan anket formu ile değerlendirilmiştir. Ayrıca gönüllü olan 30 öğrenciye, üniversitemiz Beslenme İlkeleri Laboratuvarında deneysel olarak hazırlanan yöresel yemekler ve Kayseri iline özgü besinler tanıtılmış ve besinsel özellikleri konusunda bilgi verilmiştir. Öğrenciler bu besin ve yemekleri duyusal olarak değerlendirmiş ve puanlandırmışlardır. Puanlama 1 ile 10 arasında yapılmış, en beğenilen yemeğe 10, en az beğenilen yemeğe 0 puan verilmiştir. Elde edilen sonuçlar SPSS bilgisayar programı ile değerlendirilmiştir.

Abstract

Students coming from different geographies may experience difficulties in being adapted to the nutrition culture of the new city while trying to carry on their own dietary habits. Supported by TÜBİTAK 2209-A, this study was conducted to determine the nutritional status of the international students studying in Kayseri, evaluate their adaptation to the Turkish food culture and provide their orientation. In the study conducted between March and May 2016, 166 foreign university students, who came to the city of Kayseri at least a month ago, were included in the study. The changing dietary habits of the students after coming to Turkey, and their general nutritional status were evaluated via the questionnaire made through face-to-face interview. 30 students who were voluntary in the group were introduced with the local dishes and foods specific to the Kayseri city prepared experimentally in the Laboratory of Principles of Nutrition in our university, and they were informed about their nutritional characteristics. The students reached their opinions on these foods and dishes from sensory aspect and they scored them. The scoring was made between 1 and 10 points, and the most liked dish received 10 points; whereas, the least liked one received 0 point. The results obtained were assessed using SPSS 22 program.
