Özet

Beş yıldızlı otel işletmeleri 7/24 esasına göre farklı birimlerde yeme-içme hizmeti veren işletmelerdir. Bu durum otel işletmelerinin büyük ölçeklerde ve sürekli olarak yiyecek-içecek hammaddesi satın aldıklarını göstermektedir. Öyle ki beş yıldızlı bu tesislerde yılda 30.000 farklı ürün için ortalama 25- 50 milyon TL arası bir harcama yapıldığı, satın alma departman yöneticileri tarafından ifade edilmiştir. Bu çalışma ile Türkiye’de faaliyet gösteren beş yıldızlı otel işletmelerinin yiyecek-içecek satın alma davranışları belirlenmeye çalışılmıştır. Araştırmanın evrenini 612 beş yıldızlı otel işletmesi oluşturmaktadır. Veriler kolayda örnekleme yöntemiyle toplanmıştır ve Türkiye’nin farklı il ve bölgelerinde faaliyet gösteren 321 adet 5 yıldızlı otel işletme yöneticileri araştırmanın örneklemini oluşturmuştur. Satın alma yöneticilerinin demografik özellikleri ile tedarikçi ilişkileri boyutlarında anlamlı bir farklılık olup olmadığına ilişkin T-testi ve Anova analizlerinden yararlanılmıştır. Elde edilen bulgular, satın alma yöneticilerinin yaşı, eğitim düzeyleri ve işletmedeki pozisyonlarına göre bir farklılığın olmadığını ortaya koymuştur. Bununla birlikte, cinsiyet, sektör tecrübesi ve aynı otelde çalışma yılı değişkenlerinde, boyutlar bazında istatistiksel açıdan anlamlı farklılıklar tespit edilmiştir. Bunlar içerisinde en dikkat çekici bulgular, kadın yöneticilerin tedarikçi ilişkilerinde daha titiz davranmasının tespiti ile sektör tecrübesi yüksek yöneticilerin tecrübe süresi oranında ilişkileri daha az önemsemeleridir.

Abstract

As is known, five-star hotel businesses are businesses that provide food& beverage services in different departments for 24 hours a day in 365 days of the year. This shows that hotel businesses constantly procure food& beverage raw materials on a large-scale. In fact, the interviews carried out show that in these five-star facilities an amount of 25-50 trillion Turkish Liras is spent annually for 30.000 different products. In this study, food and beverage purchasing behaviours of five star hotels in Turkey has been determined. The population of the study consists of 612 five-star hotels managers. The data were collected by easy sampling method and 321 Five- Star hotel managers in different provinces and regions in Turkey consists of the sample of the research. The t-test and anova analysis were used to determine whether there is a significant difference in the dimensions of the demographic characteristics and supplier relationships of the purchasing managers. The results of the test showed that there was no difference between the age of the purchasing managers, the level of education and their positions in the enterprise. On the other hand, statistically significant differences were determined on the basis of dimensions in terms of gender, sector experience and working year variables in the same hotel. The most noteworthy findings in this regard are that women executives should be more careful in supplier relationships, and that managers with high experience in the sector experience less importance on relationships.
