Wheat Flour Alternatives Used in Tarhana Production

Abstract
The aim of this study was to investigate the possibilities of using various flour substitutes instead ofwheat flour in the production of tarhana, which is a fermented food. In the studies examined for thispurpose, various legume and cereal flours (oats, quinoa, lupine, wheat germ, chickpeas, beans, corn,rice, buckwheat and lentil flours), tomato paste production waste (tomato seed, tomato pulp, pepperseed, pepper pulp), potato starch, chestnut flour, carob flour, hazelnut pulp, almond pulp, and fishmeat were substituted for wheat flour. With these substitutions used instead of wheat flour in theproduction of tarhana, it was aimed to increase the nutritional properties of the tarhana, improve itssensory properties and quality features. Alternative flours used in the production of tarhana wereinvestigated in this study. According to the results obtained from the compiled studies, tarhanaproduced with the use of substitute flour will be an alternative to demand of consumers with highfunctional, natural and nutritional quality.
Özet
Bu çalışmada fermente gıda olan tarhana üretiminde buğday unu yerine, çeşitli un ikamelerinin kullanım olanaklarının araştırılması amaçlanmıştır. Bu amaç doğrultusunda incelenen çalışmalarda tarhanalara farklı oranlarda çeşitli bakliyat ve hububat unları (yulaf, kinoa, lupin, buğday ruşeymi, nohut, fasulye, mısır, pirinç, karabuğday ve mercimek unları), salça üretim atıkları (domates çekirdeği, domates posası, biber çekirdeği, biber posası), patates nişastası, kestane unu, keçiboynuzu unu, fındık posası, badem posası ve balık etinin buğday unu yerine ikame edildiği belirtilmiştir. Tarhana üretiminde buğday unu yerine kullanılan bu ikameler ile tarhananın besinsel özelliklerinin artırılması, duyusal özelliklerinin geliştirilmesi ve kalite özelliklerinin iyileştirilmesi amaçlanmaktadır. Derlenen çalışmalardan elde edilen sonuçlara göre ikame un kullanımıyla üretilen tarhanaların tüketicilerin fonksiyonel, doğal ve besinsel niteliği yüksek gıda talebine alternatif olacağı düşünülmektedir.
