Abstract

In this study, oil content of bitter orange’s seed (Citrus aurantium L.), which has high seed content, and fatty acid composition of this oil was determined with respect to harvesting time. The seed content of bitter orange was determined as 6.03% for fresh fruit. Oil content of this seed was 33.57% for first harvest sample and 33.74% for second harvest sample. And, seven different fatty acids was recognized for this oil. These ones were palmitic, palmitoleic, oleic, linoleic, linolenic and arachidic acids and ranged between 25.37–25.46%, 0.21–0.23%, 5.75–5.86%, 24.57–24.84%, 34.91–35.16%, 8.24–8.53%, 0.44–0.45%, respectively. As a result, oil content of bitter orange seed and fatty acid composition of this oil did not vary significantly depends on harvesting time. And, this research results showed that bitter orange seed oil could be evaluated in different industrial applications as alternative vegetable oil source with respect to its fatty acid composition.
