Abstract

In this study, the physical and chemical properties and volatile component distributions of the white mulberries, which are the geographically indicated agricultural products from which the Tut district of Adıyaman got its name, were determined in traditionally dried samples obtained from three different regions of the Tut district. The pH values in the samples varied between 4.43-5.05, the titration acidity ranged between 1.09-1.33 g malic acid/L and the percentage of water-soluble dry matter (Brix) in the samples ranging between 83.3-88.8%, The L value, which defines the brightness, , the value of a which defines the red color and the b value which defines the yellow color, varied between 49.45-55.63, 5.47-6.22 and 22.61-24.45, respectively. A total of 61 different volatile components were identified in the distribution of volatile components by SPME/GC-MS. Among the volatile components found in all samples, 6-methyl-5-hepten-2-one with green, citrus flavor, Heptanoic acid with bitter flavor, Nonanal with citrus flavor and Benzoic acid with hot pepper flavor characterize the aromatic structure of geographically indicated Tut dried mulberry.
