Abstract

Indian butter tree (Aesandra butyracea (Roxb) Baehni), locally called "chiuri", is a major source of honey in low hill areas of Nepal. Sugar analyses were thus carried out to evaluate the quality of its nectar, honey and sugar candy "gur". Studies were also carried out on the floral biology, nectar secretion and solute concentration. Indian butter tree flower secreted 13.8 to 51.9 /$mu$ nectar per flower per day and contained 25-44% solutes. Sugar spectrum of nectar and honey corresponded to each other. Both nectar and honey predominantly contained monosaccharides such as fructose and glucose with small quantities of disaccharides. Sugar candy, on the other hand, did not correspond with the sugar composition of nectar and honey. There the main sugar was sucrose, which accounted for 91 % of total sugars.
