Abstract

In this study carried out phytochemical componts were investigated during maturation of Gewürztraminer, Pinot Noir, Narince and Syrah wine grape cultivars grown in Kazova (Tokat) region. The amount of total phenolic and antioxidant capacities were determined in all varieties and the amount of anthocyanins was determined in colored varieties. Total phenolic (μg GAE/g ka), total anthocyanin (μmol TE/g ka) and antioxidant (μmol TE/g ka) capacities were determined in the colored varieties of berry skin, pulp and seed. The total phenolic compounds and total antioxidant of grape cultivars ranged from 28.4 (Gewürztraminer) to 235.5 (Syrah) μg/g fw, from 1081.9 (Narince) to 2886.7 (Syrah) μg galik acid/g fw), respectively. The total phenolic content and antioxidant capacity values found in the seed of the fruit were found to be higher than the crust and pulp in all varieties.

Özet

Bu araştırmada, Tokat (Kazova) koşullarında yetiştirilen bazı şaraplık üzüm çeşitlerinde(Gewürztraminer, Pinot Noir, Narince ve Syrah) olgunluk döneminde fitokimyasal içeriklerini belirlemekamaçlanmıştır. Araştırmada yer alan tüm çeşitlerde tanede toplam fenolik miktarı ve antioksidankapasiteleri, renkli çeşitlerde ayrıca antosiyanin miktarı değerleri saptanmıştır. Renkli çeşitlerde kabuk, meyve eti ve çekirdek kısımlarında toplam fenolik (μg GAE/g ka), toplam antosiyanin (μmol TE/g ka) veantioksidan kapasiteleri (μmol TE/g ka) saptanmıştır.
