Abstract

Propionic acid bacteria (PAB) have been isolated first by Freudenreic and Orla-Jensen from Emmantel cheese. According to their origin of isolation, PAB are divided into two main groups, classical and skin origin (pathogen) PAB. The former, also known as dairy propionibacteria, is particularly found in raw milk, butter and Swiss-type cheeses, where they play a major role during ripening. For this group, which is especially important for dairy industry, classical isolation and identification methods are most widely-used procedures. However, identification of propionibacteria species by conventional methods is slow and can be difficult to identify the specific types. Therefore, recent scientific studies have focused on the use of molecular methods. With the help of these methods, it has been possible to determine propionic acid bacteria classes, species and strain basis and to identify sub-types of P. freudenreichii. But, genetic methods in microbiology are very new, and need to be supported by more studies. The aim of this review is to present the use of molecular methods to isolate and identify PABs in dairy products.
