Abstract

In this study; It is aimed to evaluate the traditional sourdough bread of Isparta in terms of some quality characteristics thus contributing to standardization in its production in order to protect this cultural heritage and transfer it to future generations. Weight, volume, specific volume, moisture, ash, total titration acidity, salt content and texture profile properties (TPA) and staling speeds of bread samples taken from 10 local bakeries producing traditional sourdough bread in the city center of Isparta, during 3 periods with 4 months intervals were measured. Significant differences were found between bakeries and periods in terms of all these measured values (P> 0.05). It was determined that the specific volume, moisture, ash, salt and crumb softness values of sourdough bread samples varied between 2.6-5.1 cm3/ g, 34.5-45.3%, 1.63-3.02%, 0.74-2.04% and 6.40-7.91 g, respectively. As a result, it was determined that the measured quality characteristics of sourdough Isparta bread varies between different producers and different production periods, that is, there is no standard production. Due to the increasing interest and demand for traditional products in recent years, the production of traditional Isparta sourdough bread should be standardized in order to increase its recognition and to widespread the consumption.
