Bu araştırmada, peynir altı suyundan ultrafiltrasyon yöntemiyle peynir altı suyu protein konsantratı elde edilmiş ve daha sonra bu ürün bir proteolitik enzim olan tripsin kullanılarak peptonlaştırılmış ve liyofilize edilmiştir.
