Today, the use of oak barrels has an important role in the wine technology. Nowadays, it’s not easy to state in our country that, oak barrels are being used in conscious. Contrarily and significantly in last few years, large cooperation with modem installation has begun to use oak barrels in a better conscious for the production of quality wines. In this study, the general specialties of the oak barrels and their use in wine production have been focused on.

Meşe fıçı kullanımı günümüz şarap teknolojisinde önemli bir yer tutmaktadır. Bugün ülkemizde meşe fıçıların bilinçli bir şekilde kullanıldığını söylemek oldukça güçtür. Ancak son yıllarda özellikle modern işletmeler ithal ettikleri meşe fıçıları kaliteli şarap üretiminde daha bilinçli olarak kullanmaya başlamışlardır. Bu çalışmada meşe fıçıların genel özelikleri ve şarap üretiminde kullanımları üzerinde durulmuştur.
