Abstract

The aim of this study was to investigate the development and toxination ability of S. aureus strain forming A (SEA 10652 FDA 196E) enterotoxin in sheep's milk yoghurt. For this purpose after pasteurizing the sheep's milk (at 90 °C for 5 min) intended for use in yoghurt production it was 4 6 contaminated with 10 kob/ml and 10 kob/ml level S. aureus strain after which this contaminated milk was used to experimentally produce yoghurt. The yoghurts were stored at temperatures 4 °C, 18 °C, 25 °C ve 30 °C for a period of 21 days. The trial yoghurts were examined microbiologically, physico-chemically and serologically on the 1., 3., 7., 15. and 21. days of the trial. 5 Although S. aureus amount reached the maximum level of 3.0 x 10 at the end of fermentation period in 4 the yoghurts produced with 10 kob/ml contaminated sheep's milk no enterotoxin production was observed during fermentation stage or storage period. On the other hand sheep yoghurt which had been contaminated 6 7 with 10 kob/ml S. aureus maximum value 7.6 x 10 of S. aureus was reached at the end of fermentation period and enterotoxin formation was observed in the first hours of fermentation period. 6 As a result, it has been determined that if pasteurized milk is contaminated by 10 kob/ml level S. aureus this can lead to toxin production within a few hours (1-3 hours) and pose a public health risk. In the 4 beginning of S. aureus contamination where the level exceeds 10 kob/ml, fermentation (acidity) period or bacteriocines apparently have no restraining effects on S. aureus toxin production.
