Abstract

Generally, the keeping quality of yoghurt is limited because of the growth of yeasts and moulds. This can even occur at cold storage temperatures (5-7°C). On the other hand, if yoghurt is not contaminated, will become too acidic and acquire a bitter taste after a certain time because of the further acidification and a possible protein hydrolysis caused by Lactobacillus bulgaricus. For this reason, pasteurisation process of yoghurt, is one of the methods in the production of long-life yoghurt. In this research, three different fruit yoghurt productions (kiwi, rasberry and peach) were achieved. In this productions, yoghurts were heated at 70°C for 30-40 seconds and store at 4-7°Cfor 8 months. According to the obtained results from this research; during the storage, pH, titratable acidity, total solids and ash contents of all yoghurt types were not changed significantly. The ascorbic acid contents decreased significantly by heating process. Total bacteria, yeasts and moulds and coliform bacteria are totaly inhibited by the heat treatment.
