Abstract

In recent years, an increasing interest has developed in foods including bioactive components that contribute a positive effect on health beside their nutritive value. Among these foodstuffs, antioxidants reducing or preventing the risk of diseases in addition to a number of nutritional macro- and micro-components are in bioactive components of milk. The antioxidant activity of milk has comprised numerous bioactive components such as proteins, vitamins (E and C), retinol and β-carotene, catalase, superoxide dismutase and glutathione peroxidase. In this review, information on the native antioxidant efficient enzymes of milk will be given.
