Abstract

Flesh yield and moisture content variations of cuttlefish (Sepia officinalis L., 1758) in consideration with sexual maturation. In this study, was observed the chemical composition of head and mantle portions from totally 67 cuttlefish (Sepia officinalis, L. 1758) caught from Gulf of Antalya and the variations in the flesh yield and moisture content with the sexual maturity stage. The mantle and head flesh yields of female varied between 25.03±2.98 -32.15 % and 16.04±5.76 - 21.70±2.82 %, respectively. As mantle and head flesh yields in male were 25.20 % and 16.60 % at stage I of sexual maturity, reached 29.73±3.07 – 30.70±1.38 % and 20.70±1.81 – 21.42±2.37 % at stages II and III of sexual maturity, respectively. Those were 35.20±3.08 % and 25.13±4.22 % at stage IV of sexual maturity, respectively. Mantle flesh yield (r=0.397, p<0.05), head flesh yield (r=0.497, p<0.01) and mantle+head flesh yield (r=0.551, p<0.05) of male according to sexual maturity show a significant difference. The total flesh yield of cuttlefish varied between 38.69±14.13 % and 60.33±3,97 %. As the stage of sexual maturity increased, moisture content decreased in male (p<0.01). A significant corelation was determined between the moisture content and flesh yield of mantle (r=-0.578, p<0.01), and between the moisture content and flesh yield of head (r=-0.590, p<0.01) in female. A significant corelation was found between the moisture content of mantle and head in female (r=0.476, p<0.01) and in male (r=0.736, p<0.01). It was found that percentages of moisture, protein, lipid and ash varied between 77.36±3.14 – 82.34±2.63%, 14.10±0.53 – 17.20±0.44%, 1.57±0.83 -1.82±0.58 and 1.25±0.91 – 1.18±0.32%, respectively.

Erkeklerde I. safhada manto et verimi % 25,20, baş et verimi % 16,60 iken, II. ve III. safhalarda manto et verimi % 29,73±3,07 - 30,70±1,38, baş et verimi % 20,70±1,81 - 21,42±2,37 değerlerine ulaşmıştır.
