Abstract

Neurotransmitters play many critical roles in the human body. These include controlling mood, maintaining cognitive functions, and inducing behavioral reactions. In this context, metabolism plays a significant physiological role in the synthesis and regulation of neurotransmitter functions through the transformation of nutrients via biochemical processes. Nutrition, on the other hand, is a significant environmental factor that directly contributes to the sustainability of brain health by reaching the source of the chemical transmission that occurs. Today, the sustainable nutrition perspective creates a comprehensive perspective that both prioritizes human health and creates environmental awareness. Looking at the literature, there are few studies reflecting the relationship between neurotransmitters, nutrition, and metabolism within the scope of sustainability. The aim of this study is to examine the sustainability levels of scientific publications covering the neurotransmitter, nutrition, and metabolism link by revealing them through bibliometric analysis. Accordingly, the study aims to contribute to filling the conceptual and thematic gap in the literature by addressing the relationship between these fields from a sustainability perspective. Web of Science was chosen for this purpose. In this study, the Web of Science database was searched using the bibliometric analysis method; Studies published between 1979 and 2025 were examined using the keywords “neurotransmitters”, “nutrition”, “metabolism”, and “sustainability” in sequential order. A total of 12 studies published in the form of articles, research papers, editorial materials, and letters were evaluated. The results show that the studies in the literature are predominantly experimental, review, and theoretical. The studies are found in the literature within an interdisciplinary context encompassing metabolism, nutritional science, neuroscience, and psychiatry. However, there are few academic studies in the field of gastronomy that reflect a sustainability perspective on the relationship between neurotransmitters, nutrition, and metabolism. This study aims to make an original contribution to the literature by addressing the relationship between neurotransmitters, nutrition, and metabolism from a sustainable nutrition perspective.

Bibliyometrik analiz amacıyla Web of Science bu amaca hizmet edilerek seçilmiştir.
