Abstract

Today, 20.344.343 tone olive is produced on 10.309.274 hectare across the world (FAO, 2013). Over 90% of this production is actualized around the Mediterranean basin. According to production mean between 2009-2013 years, Spain rank first place over olive oil production with 6.742.963 tone, while Italy ranks second place with 3.119.517 tone these figures are followed by 2.010.148 in Greece, 1.590.331 in Turkey and 1.253.969 in Morocco. Olive being a highly valuable agricultural product is economized as both edible table product and olive oil. Due to its opportunity to be consumed unrefinedly, olive is of capital importance as a highly nutritive agricultural product. Today, average table olive production reached 2.473 tons while 2.979 tone is seen for oil olive production between the years of 2009 and 2013. In this study, production and consumption figures of table and oil olive between the years of 2009-2014 were evaluated.
