Abstract

Sensory, chemical and nutritional qualities are the main elements of table olive quality. The sensory quality is considered by consumers, and the importance of sensory analysis in table olives is increasing day by day. The trade category quality classification must follow the International Olive Council directives, requiring the organoleptic assessment of defects by a trained sensory panel. The aim of this study is to determine the sensory qualities of table olives marketed in Izmir (Turkey) according to the International Olive Council’s "Sensory analysis of table olives" method. For this purpose, 17 different black and green table olives were obtained from different sales points around the city of Izmir, and their sensory characteristics were determined. The sensory attributes evaluated were: a) negative attributes or defects (abnormal fermentations and other defects as butyric, putrid and zapateria, winey-vinegary, soapy, metallic, cooking effects, rancid, musty and earthy defects); b) gustatory attributes (salty, bitter, acid) and c) kinaesthetic sensations (hardness, fibrousness, crunchiness). According to Defect Predominantly Perceived (DPP ) median, 12 of the samples were in the extra class, 4 were in the first class, and 1 sample was in second class.
