Abstract

The demand for foods with high biological value such as Atlantic salmon (Salmo salar) and rainbow trout (Oncorhynchus mykiss) has increased recently with an increase in the awareness of healthy nutrition. In this study, the nutritional and fatty acid compositions of freshwater-reared and seawater-finished rainbow trout samples (TFWS and TBSS, respectively), each with a body weight exceeding 1 kg, were compared with those of Atlantic salmon (NAS). Results showed that TFWS and TBSS had higher fat, energy, and color values than NAS. The crude fat contents of rainbow trout samples (24.34±0.16% in TFWS and 26.91±0.76% in TBSS) were significantly higher than those of NAS (14.14±1.10%), whereas crude protein contents were slightly lower (P<0.05). Fatty acid analysis revealed higher monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA), omega-3, omega-6, and eicosapentaenoic acid + docosahexaenoic acid (EPA+DHA) levels in TFWS and TBSS compared to NAS. Omega-3 fatty acid contents in TBSS, TFWS, and NAS were determined as 2.0±0.09%, 1.64±0.22%, and 1.53±0.13%, respectively while omega-6 fatty acid contents were 4.30±0.12%, 3.31±0.25%, and 2.07±0.16% in a respective order. EPA+DHA fatty acid levels in TBSS, TFWS and NAS were 1.27±0.09%, 0.98±0.16%, and 0.84±0.08%, respectively. The highest phosphorus and selenium contents were observed in TFWS, and no heavy metals (lead, cadmium, mercury) were detected. Although statistical differences in those parameters were observed between TFWS and TBSS, these variations could be arisen from differences in feeding regime and farming conditions rather than inherent species characteristics. Overall, based on reference intake levels, rainbow trout samples exhibited a broadly comparable nutritional and fatty acid profile to that of Atlantic salmon under the conditions studied.
