Abstract

The aim of this study is to determine some phytochemical properties and antioxidant activity of Dwarf plum and Damson plum, which are city-specific fruits grown in Kütahya. In the study, the amount of dry matter, water soluble dry matter (SÇKM), pH, titratable acidity (TA), ascorbic aside (AA), total and reducing sugar amounts of the fruits were determined as phytochemical properties. In addition, antioxidant activity levels were determined with DPPH test. According to the study findings, the average SÇKM amounts of Mürdüm and Cücem plum samples were found to be 14.1% and 15.23%, respectively. The average pH value of Mürdüm and Cücem plum was determined as 3.24-3.39, and the average TA value was determined as 0.178%-0.125% for Mürdüm and Cücem plum, respectively. According to the sugar analysis results, the total and invert sugar values of Mürdüm plum were determined as 8.64 and 5.30 g/100 mL, and the sucrose values were determined as 3.28 g/100 mL, respectively. The total average sugar content of Cücem plum was found as 9.07 g/100 mL, the invert sugar content as 5.46 g/100 mL, and the sucrose content as 3.61 g/100 mL. The average antioxidant activity of Mürdüm and Cücem plum with DPPH radical scavenging test was found as 24.74%-61.57%, respectively; and the average AA amount was found as 8.13-7.62 mg/100 mL, respectively. This study is the first study conducted to introduce and evaluate Mürdüm and Cücem plum, which are plum varieties specific to Kütahya, and to raise awareness for the protection of existing genetic resources. It is thought that it will provide a resource for future studies on this subject.
