A type of pastry product, a bun has a crispy structure. Various versions are made in world cuisines, especially in Turkish cuisine, such as oily, eggy, sugary, and salty. Kaman and its surroundings have been a Turkish-Islamic land for a thousand years due to its geographical location and are the largest district in Kırşehir's historical and cultural texture. In Kaman district, where the characteristic features of Turkish culinary culture prevail, there is a type of oily bun, which is a type of pastry product, specially prepared. In this context, the study aims to determine the current status of pastry types in Turkish cuisine and to determine the traditional elements of oily bun, which is made specifically for eids in the Kaman region, in all its aspects. In the study, which was designed in accordance with qualitative research methods, data were collected in two stages. These stages include the Turkish Patent and Trademark Office database for bun types and participant opinions for Kaman eid bun. First, the study included the types of buns with geographical indications in Turkish cuisine. Then, the characteristics of the oily bun made during eids specific to the Kaman region in the local culinary culture were explained in all aspects. Finally, in line with the participants' opinions, a sample recipe was prepared including the ingredients, stages and preparation of the product and the content analyses were completed. In this context, in addition to drawing attention to the types of buns with geographical indications in Turkish cuisine, an attempt was made to introduce an oily bun type, a gastronomic product specific to the Kaman region, to the literature.
