Abstract

In this study, the production of apple juice snacks with 3D printing techniques was investigated. These snacks are expected to be valuable alternatives for those who don't like eating apples in their natural form or who can't eat apples due to their firm texture. For processing in a 3D printer, apple juice-based disintegrated gels were produced using a mixture of locust bean gum + xanthan gum at various concentrations. It was observed that rheological properties of disintegrated gels were affected by gelator concentration. It was determined that print quality was also affected by gelator concentration and high print quality was achieved with gelator concentrations of 0.75%+0.75% and 1.00%+1.00%. The sample with a gelator concentration of 0.75%+0.75% was the most preferred sample by consumers. Due to both its high print quality and superior sensory appeal, the sample with a gelator concentration of 0.75%+0.75% was selected as the most successful sample.
