Abstract

Ultrasound (US) technology is an innovative food processing method that offers several advantages in fermented dairy production. This study aimed to determine the ultrasound power and duration that have an acceptable positive effect on some physicochemical properties of ‘ayran’ (a Turkish yogurt drink). Raw milk was treated with ultrasound at three power levels (75, 100, and 125 W) and different treatment times (0-control, 5, 10, 20, and 30 min.), followed by ‘ayran’ production using the conventional method. Samples were stored at 4 °C for 21 days; acidity, pH, serum separation, viscosity, and color parameters were analyzed on days 1, 7, 14, and 21. As ultrasound power increased, serum separation decreased, while viscosity and L* values increased (P<0.05). In conclusion, in the examined ‘ayran’ samples, the 100 W US power and 20-minute application time showed more positive effects compared to other applications in terms of viscosity, serum separation, and L* (brightness) properties.

Özet

Ultrason (US) teknolojisi, fermente süt ürünleri üretiminde kaliteyi iyileştiren yenilikçi bir gıda işleme yöntemidir.
