Gastronomi Sektöründe Sivil Toplum Örgütlerinin Rolü: TAŞPAKON Örneği

Özet
Sivil toplum kuruluşları temsil ettikleri kitlelerin seslerini çok yönlü duyurabilmek için alternatif bir seçenek olmaktadır. Bu kuruluşlar, doğru bir şekilde çalıştıkları takdirde bulundukları sektörün gelişimi için büyük adımlar atarlar. Farklı konularda toplumsal olaylara duyarlılık gösteren bu kuruluşlar toplumda destekledikleri kitleleri farklı platformlarda temsil etmektedir. Alanında başarılı bir örnek teşkil eden Dünya’da ve Türkiye’de konusunda en büyük mesleki sivil toplum kuruluşu ve de Konfederasyon olan TAŞPAKON (Tüm Aşçılar ve Pastacılar Konfederasyonu) gastronomi alanında önemli başarılara imza atmaktadır. Alanyazında sivil toplum kuruluşlarının temsil ettikleri alana katkılarının detaylı bir şekilde incelenmediği tespit edilmiş ve bu amaç doğrultusunda bu çalışmada bir süredir gelişmekte olan gastronomi alanının sektörel ayağında önemli bir rol oynayan TAŞPAKON değerlendirilmiştir. TAŞPAKON’un gastronomi alanına çeşitli açılardan yaptığı katkılar ele alınmıştır. TAŞPAKON’un başkanı ile görüşme yapılmış ve bu görüşmenin neticesinde çok yeni kurulmuş (2015) olan TAŞPAKON’un bu yeni yapılanmasına rağmen sektörel anlamda gerçekleşen başarısı ortaya konmuştur.
Abstract
Non governmental organizations are an alternative option for the masses they represents in order to announce their voices sophisticatedly. If these organizations work properly, they take a big step for developing the sector where they take part. These organizations showing awareness to different social events represent the masses in different platforms. TASPAKON (All Chefs and Pastry Cooks Confederation) which is a successful example in its area and is the largest non governmental organization and confederation in both Turkey and the world achieve significant success’ in the area of gastronomy. It is determined that the detailed contributions of the non governmental organizations to the area they represents do not exist in the literature, so for this reason in this study TASPAKON which is ongoingness and has an important role in sectoral parts of the gastronomy area is evaluated. The contributions to the gastronomy area from various aspects of TASPAKON are addressed. The interview with the head of TASPAKON have been done and in the conclusion of this interview, however the new structuring of TASPAKON, the sector success of it is revealed.
