Etlik Piliçlerde Genotipin Göğüs Eti Rengi ve Kimyasal Özellikleri Üzerine Etkileri

Özet
Bu çalışmada, iki ticari etlik piliç genoüpi (genotip A ve genotip B) göğüs eti rengi ve kimyasal özellikleri bakımından karşılaştırılmıştır. Genotip B etlik piliçlerinin canlı ağırlıkları genotip A ile benzer, göğüs eti miktarı ise daha yüksek tespit edilmiştir. Genotip B etlik piliçlerinden elde edilen göğüs etinin pH'sı daha düşük, L" değeri daha yüksek ve a* değeri düşüktür. Bununla beraber genotipler arasında göğüs etinin b* değeri ve su kaybında farklılık yoktur. Göğüs etinin nem, protein ve yağ içeriği bakımından genotip A ile genotip B arasında önemli bir farklılık yoktur.
Abstract
in this study, breast meat color and chemical composition were compared between two commercial broiler genotypes (genotype A and genotype B). Birds from the genotype B exhibited similar body weight but higher breast weight than those of genotype A. Genotype B had significantly Iower pH, greater L* values, and Iower a* values in the breast muscle. However, there was no difference in b* value and drip loşs in the breast muscle between any genotypes, Birds from the genotype A did not differ in breast meat moisture, protein and lipid content from those ofthe genotype B.
