Özet

Bu çalışma Amerika Birleşik Devletleri’nin Wisconsin eyaletinin Cashton Bölgesinde yaşayan Amish topluluğunun gastronomi kültürünü incelemek amacıyla gerçekleştirilmiştir. Çalışmada sağlıklı verilerin elde edilebilmesi için veri toplama yöntemi olarak derinlemesine görüşme yöntemi kullanılmıştır. Hristiyanlığın bir mezhebi olan Amish’lerin inançları gereği kapalı bir yaşam tarzını benimsedikleri, teknolojiyi reddeden ve dış toplum ile kısmen iletişimde oldukları bilinmektedir. Bu bağlamda Amish topluluğunun gastronomik kültürünü oluşturan yemek ritüelleri, gıda üretimi, gıda tedariki, gıda işlenmesi ve servis süreçleri hakkında bilgi toplamak amacıyla literatürden faydalanılarak yarı yapılandırılmış bir soru formu hazırlanmıştır. Veri toplama sürecinde araştırmacılar Wisconsin eyaletinin Cashton bölgesinde yaşayan Amish topluluğu ile yaklaşık iki hafta geçirip bölge halkı ile görüşmeler yaparak çeşitli gözlemlerde bulunmalarının çalışmayı önemli kıldığı düşünülmektedir. Çalışmaya yedi erkek ve beş kadın olmak üzere toplam 12 aile lideri veya üyesi katkı sağlamıştır. Elde edilen verilerin analizi aşaması; katılımcıların cevapları kategorilere ayrılması, katılımcıların verdikleri cevaplardan direk alıntılar yapılması ve araştırmacıların yorumlarına yer verilmesi, kod ve temaların oluşturularak tablolar halinde sunulması ile gerçekleşmiştir. Çalışma sonucunda Amish’lerin geleneksel yöntemler ile üretim yaptıkları, gıda tedarikini genellikle kendi ürettikleri ürünlerden sağladıkları, tarım ve hayvancılık ile geçimlerini sağladıkları anlaşılmıştır. Ayrıca Amish’lerin gıdaları saklamada geleneksel yöntemler olan kurutma, konserve, tuzlama, fermente etme ve pişirerek saklama gibi yöntemleri kullandıkları sonucuna varılmıştır.

Abstract

This study was carried out in order to examine the gastronomic culture of the Amish community living in the Cashton District of Wisconsin, USA. In order to obtain healthy data in the study, in-depth interview method was used as a data collection method. It is known that the Amish, a sect of Christianity, adopt a closed lifestyle due to their beliefs and are partially in contact with the outside society, which rejects technology. In this context, a semi-structured questionnaire was prepared by making use of the literature in order to gather information about the food rituals, food production, food supply, food processing and service processes that make up the gastronomic culture of the Amish community. During the data collection process, it is thought that the researchers made various observations by interviewing the Amish community living in the Cashton region of Wisconsin and the people of the region who spent about two weeks. A total of 12 family leaders or members, seven men and five women, contributed to the study. The analysis phase of the obtained data; The answers of the participants were divided into categories, direct quotations were made from the answers given by the participants and the comments of the researchers were included, codes and themes were created and presented in tables. As a result of the study, it has been understood that the Amish produce food with traditional methods, they usually get their food supply from the products they produce and local stores, and they make a living from agriculture animal husbandry and various craftsmanship. They also concluded that the Amish used traditional methods of preserving food, such as drying, canning, salting, fermenting, and cooking.
