Amaç: Bu çalışma İstanbul'da bulunan üç özel hastanenin HACCP kalite güvence sistemi sertifikasına sahip mutfaklarından alınan yüzey örneklerinde hijyenik durumun ve çalışan personelde hijyen farkındalığının belirlenmesi amacı ile yapılmıştır. Yöntem: Çalışmada toplam 200 mutfak personeline yüz yüze sorma yöntemi ile demografik verilerin alınması ve hijyen bilgi düzeyini belirlemeye yönelik hazırlanmış 20 soruluk anket uygulanmıştır. Abstract
Objective: This study was carried out with the aim of determining the hygienic conditions in the surface samples and also hygiene awareness of the working personnel in the 3 private hospital kitchen in Istanbul, which have HACCP quality assurance system certificate.Methods: In the study, a questionnaire consisting of 20 questions was prepared to determine the level of hygiene information and to get demographic data by using face to face method to 200 kitchen staff.
