Gastronomik Akımlar Çerçevesinde Gıda Tüketim Ölçeği1

Özet

Gastronominin insanların yaşadıkları deneyimler üzerindeki önemi göz önünde bulundurulduğunda; yeme-içme eğilimlerinin incelenmesi, turizm işletmecilerinin, özellikle de turizm pazarlama yöneticilerinin, turistik ürün geliştirme ve tutundurma stratejilerini belirlemelerinde önemli olduğu söylenebilir. Bu bağlamda, günümüz gastronomik akımları çerçevesinde Lawshe tekniği kullanılarak bir gıda tüketim ölçeği geliştirilmiştir. Çalışma sonunda ortaya çıkan faktör yapıları incelendiğinde; moleküler mutfak yeme eğilimliliği (16 madde; ?=,935), füzyon mutfak yeme eğilimliliği (11 madde; ?=,917) ve yerel mutfak yeme eğilimliliği (12 madde; ?=,929) olmak üzere toplam 3 faktör ve 39 maddeden oluşan bir gıda tüketim ölçeğinin ortaya çıktığı anlaşılmaktadır

Abstract

When considering the importance of gastronomy on experience, the examination of gastronomic trends is important for tourism operators and tourism planners in terms of tourism promotion strategies and touristic product development. In this context, within the frame of recent gastronomic trends, a food consumption scale consistent with literature has been developed by using Lawshe technique. When factor structure analyzed, with total factor of 3 and 39 items (molecular cuisine eating tendency, 16 items, ?=,935; fusion cuisine eating tendency, 11 items, ?=,917; local cuisine eating tendency, 12 items, ?=,929) a food consumption scale was developed.
