Gastronomi Envanteri Oluşturulması: Gastronomi Şehri Afyonkarahisar Örneği

Özet

Bu araştırmanın amacı, Afyonkarahisar’ın gastronomi envanterinin oluşturulmasıdır. Araştırmanın evrenini, Afyonkarahisar’ın gastronomi değeri taşıyan köyler ve beldeleri oluşturmaktadır. Araştırma kapsamında yarı yapılandırılmış görüşme tekniği kullanılarak katılımcılara 13 adet açık uçlu soru yöneltilmiştir. Çalışmanın amaçları doğrultusunda, katılımcılardan elde edilen verilerle ana temalar ve alt temalar tanımlanarak MAXQDA 2020 Programı aracılığıyla analiz edilmiştir. Araştırma sonuçlarına göre Afyonkarahisar, farklı etnik grupları bünyesinde barındıran zengin mutfak kültürüne sahip bir şehir olmakla birlikte, her köy ve beldede yemek kültürü değişkenlik göstermektedir.

Abstract

The aim of this research is to creating gastronomy inventory of Afyonkarahisar. The universe of the research consists of the villages and towns of Afyonkarahisar that have gastronomic value. Within the scope of the research, semi-structured interview technique, one of the interview techniques, was used. In this context, 13 open-ended questions were asked to the participants in the study. The obtained data, themes and sub-themes were defined in line with the purposes of the study, and the data were analyzed using the MAXQDA 2020 Program. According to the results of the research, although Afyonkarahisar is a city that includes different ethnic groups and has a rich culinary culture, the food culture varies in each village and town.
