YEŞİL NESİL RESTORANLARA YÖNELİK MÜŞTERİ YORUMLARININ İÇERİK ANALİZİ İLE DEĞERLENDİRİLMESİ

Özet
Turizm endüstrisinde yeme içme sanatı ve sağlıklı beslenme eğilimleri son yıllarda oldukça ön plana çıkmaktadır. Diğer taraftan iklim değişikliğinin küresel sisteme olan etkilerinin mümkün oldukça azaltılması için bütün endüstrilerde olduğu gibi turizmin tüm alanlarında da sürdürülebilirlik felsefesine dikkat edilmektedir. Bu noktadan hareketle yiyecek içecek işletmelerinde tüketicilerin damak zevkleri ve sağlıklarına uygun ürünler sunulurken diğer taraftan da sürdürülebilir ve çevreye duyarlı işletmecilik anlayışı giderek önem kazanmıştır. Yeşil restoranlar müşterilere sundukları hizmetlerde yerellik, kültürel değerler, organik gıdalar, geri dönüşüm uygulamaları, atık yönetimi vb. unsurlara önem veren işletmelerdir. Konu ile ilgili olarak gerçekleştirilen akademik çalışmalarda fiyatları diğerlerine göre daha yüksek olsa dâhi sürdürülebilirlik konusunda farkındalık sahibi ve sağlıklı beslenme bilinci yüksek olan turistlerin, yiyecek içecek işletmeleri tercihlerinde yeşil restoranların ilk sırada olduğunu belirten çalışmalar da bulunmaktadır. Bu kapsamda gerçekleştirilen çalışmanın amacı İstanbul’da “Yeşil Nesil Restoran” sınıflandırmasına sahip olan yiyecek içecek işletmelerine yönelik Tripadvisor.com üzerinde yer alan müşteri yorumlarının incelenerek, müşterilerin yeşil nesil restoranlara yönelik farkındalıklarını ortaya koymaktır. Ayrıca müşterilerin bu restoran işletmelerinin “yeşil” özelliğinin ne kadar farkında olduğu ve yorumlarında bu özellikten bahsedip etmediğinin de belirlenmesi hedeflenmiştir. Elde edilen verilerin MAXQDA nitel veri analizi programı aracılığı ile analiz edilmesinden sonra lezzet, müzik, hizmet kalitesi, tasarım, hijyen ve menü temaları altında toplandığı görülmüştür. Genel olarak müşteri yorumlarının, tercih ettiği restoranda geçirdiği vakit ve buna bağlı deneyimler üzerine odaklandığı sonucuna ulaşılmıştır. Tespit edilen en önemli sonuçlardan biri ise, tüketicilerin bir restoranın “yeşil” statüsü kazanmasıyla ilgili herhangi bir yorum yapma gereksinimi duymamış olmasıdır.
Abstract
In the tourism industry, fine dining and healthy eating trends have come to the fore in recent years. On the other hand, in order to reduce the effects of climate changes on the global system as much as possible, attention is paid to the sustainability phenomenon in all areas of tourism as well as in all industries. From this point of view, while offering products suitable for the tastes and health of customers in food and beverage businesses, on the other hand, the understanding of sustainable and environmentally sensitive business has become increasingly important. Green restaurants are based on locality, cultural values, organic foods, recycling practices, waste management, etc. in the services they offer to customers. are businesses that attach importance to the elements. In relevant literature, it was revealed that even if the prices are higher than others, green restaurants will be at the forefront of the tourists’ choices who are aware of sustainability and have a healthy nutrition awareness. The purpose of the study carried out in this context is to reveal the awareness of customers about green restaurants by examining the customer comments on Tripadvisor.com for food and beverage businesses that have the "Green Generation Restaurant" classification in Istanbul. In addition, it was aimed to determine how much customers are aware of the “green” feature of these restaurant businesses and whether they mention this feature in their comments. After analyzing the obtained data through the MAXQDA qualitative data analysis program, it was seen that they were collected under the themes of taste, music, service quality, design, hygiene and menu. It was concluded that, in general, customer comments focused on the time spent in the restaurant of their choice and related experiences. One of the most important results identified is that customers do not need to make any interpretation about a restaurant gaining “green” status.
