İBN SİNA ECZANESİNDE ŞİFANIN KAYNAĞI; YEMEK REÇETELERİ

Özet

Çalışma; geleneksel beslenme reçetelerine yöneltilen “neden” sorusu ile reçetelerde yer alan besinlerin bir arada kullanılma nedenlerinin, hazırlık ve pişirim tekniklerinin, tekniklerin tercih edilme, uygulanma gayelerinin, reçete oluşturma kaidelerinin, Anadolu’dan doğan aş – şifa kültürü ile birlikte aş ve aşçının taşıdığı kritik önemin akademi ile sektöre arz edilebilmesi amacı üzerine inşa edilmiştir. Bilimin en mühim sorularından “neden” sorusunun geleneksel reçetelere yöneltilmesi ile günümüze de ulaşabilmiş birçok reçetenin bir felsefe ile üretildiği, bu felsefenin de İbn Sina’nın bilimselleştirdiği Mizaç ve Hıltlar kuramının felsefesi olduğu sonucuna ulaşılmıştır. Araştırma, İbn Sina ekolünde reçetelerin oluşturulma prensipleri ile Anadolu’nun sahip olduğu aş – şifa kültürünün aktarılabilmesi, bu kültürün Türk gastronomisi başta olmak üzere gastronomi camiasına bir katkı olarak sunulabilmesi amacıyla gerçekleştirilmiştir. Reçete uygulama – uyarlama – üretme çalışmalarında nedensel mihrakın eksikliği, yüzyılların tababet kültürünü belirleyen, Anadolu’dan doğarak, birçok coğrafyayı etkilemiş mühim bir kültürün fark edilememesine, görülememesine, aktarılamamasına, mutfağın, aşın, aşçının, beslenme reçetelerinin öneminin hakkıyla anlaşılamamasına yol açmaktadır. Oysa Sökeli Thales ile Anadolu’da başlayan aşta şifa arayışı, Empedokles, Hipokrat, Aristo, Bergamalı Galen, İskenderiyeli düşünürler, Kındi, Farabi gibi hekim feylesoflarla devam ederek İbn Sina’nın bilimselleştirdiği Mizaçlar Hıltlar Kuramı’nı oluşturan arayıştır. Bu arayış yalnızca yemek reçetelerine ve yeme - içme kültürüne değil felsefeye, tıbba, siyasete, anatomiye ve daha birçok disipline de yön vermiştir. Çalışmanın niteliği açısından araştırmanın yöntemi doküman analizi ve alanyazın tarama olarak belirlenmiştir. Yazılı kaynakların, tarihi belgelerin – ulaşılan el yazması, basılı Osmanlıca ve İbranice kaynakların - araştırmacılarca çevirileri yapılarak, analizleri gerçekleştirilmiştir ki tüm süreçte etik kurallara riayet edilmiştir. Araştırma nihayetinde; reçete içeriklerinin öncelikle coğrafi koşullar ve imkanlar doğrultusunda oluşturulduğu ancak besinlerin ve tekniklerin, İbn Sina’nın bilimselleştirdiği yemek – şifa teorisi kapsamında bilinçli olarak bir araya getirildiği sonucuna ulaşılmıştır. Tüm gayreti mutedil (dengeli, verimli) insana ulaşmak olan İbn Sina, mizaca uygun yeme – içme diyeti ile ruhsal, şuursal, bedensel dengenin korunarak, verimli ve de sağlıklı bir yaşam sürülmesinin mümkün olduğunu ifade etmiştir. Sina tarafından mizaçların muhafaza edilmesi yahut tedavi edilmesi amacıyla düzenlenen reçeteler, reçete üretme kaidelerinin de temelini oluşturmuştur. Sina’nın reçetelerinden misalen; soğuk besinlerden yoğurt, nane, sıcak besinlerden sarımsak, zeytinyağı bir araya getirilerek tuz ile nötralize edilmiş, beşeri dengeli mizaca taşıyan, şifalı cacık reçetesi ile reçetenin sebebi hasıl olmuştur. Bu sebebin anlaşılması, günümüzde yeni reçete oluşumlarının toplumsal – bireysel sağlığı bozmadan, kişilerin maddi – manevi sağlıklarına olumlu tesirle, bir kaide üzerine düzenlenmesi ve de geleneksel reçete çözümlemeleri adına oldukça mühimdir. Çalışma; İbn Sina Mizaç (Hıltlar) Teorisi kapsamında yeme – içme kaidelerini (mühim amacı) bu güne aktarabilmek, sirkencubinin, etlerin olmazsa olmazı hoşabın, şerbetin, şurubun, macunun, kahvenin, baklava yanı ayranın ve çoğaltabileceğimiz dahi örneğin üretim – tüketim amaçlarını, aştaki şifa kültürünü Türk gastronomisi başta olmak üzere gastronomi disiplinine katkı olarak sunulması gayesi ile tahkim edilmiştir.

Abstract

Study; The question of “why” directed to traditional nutrition recipes and the reasons for using the foods in the recipes together, the preparation and cooking techniques, the preference and application purposes of the techniques, the rules of creating the recipe, the cuisine and healing culture born in Anatolia and the critical importance of the cook and the cook, It was built on the aim of being able to supply the sector with the academy. By directing the question of "why", one of the most important questions of science, to traditional prescriptions, it has been concluded that many prescriptions that have survived to the present day are produced with a philosophy, and this philosophy is the theory of Temperament and Hilts, which Ibn Sina has scientificized. The research was carried out in order to convey the principles of creating recipes in the Avicenna school and the cuisine and healing culture of Anatolia, and to present this culture as a contribution to the gastronomy community, especially Turkish gastronomy. The lack of causal focus in recipe application - adaptation - production studies leads to an inability to notice, see, and convey an important culture that has determined the medicine culture for centuries, that originated in Anatolia and influenced many geographies, and that the importance of cuisine, cook and nutritional recipes are not properly understood. However, the search for healing, which started in Anatolia with Sökeli Thales, continues with physician philosophers such as Empedocles, Hippocrates, Aristotle, Galen from Pergamon, thinkers from Alexandria, Kindi and Farabi, and is the search that forms the Theory of Temperaments Hiltlar, which Avicenna scientificized. This search has guided not only food recipes and food and beverage culture, but also philosophy, medicine, politics, anatomy and many other disciplines. In terms of the nature of the study, the method of the research was determined as document analysis and literature review. Written sources, historical documents - accessible manuscripts, printed Ottoman and Hebrew sources - were translated and analyzed by researchers. At the end of the research; It was concluded that the contents of the recipe were primarily created in line with geographical conditions and possibilities, but the foods and techniques were consciously brought together within the scope of the food-healing theory that Avicenna made scientific. Avicenna, whose whole effort is to reach a moderate (balanced, productive) person, stated that it is possible to lead a productive and healthy life by preserving the spiritual, mental and physical balance with a temperamental eating and drinking diet. The prescriptions prepared by Sina for the preservation or treatment of temperaments also formed the basis of the rules for producing prescriptions. For example, from Sinai's prescriptions; Yogurt from cold foods, mint, garlic and olive oil from hot foods were brought together and neutralized with salt, and the reason for the recipe was created with the healing cacık recipe, which carries a human-balanced temperament. Understanding this reason is very important in terms of arranging new prescription formations on a pedestal with a positive effect on the material and spiritual health of people, without harming the social - individual health, and for traditional recipe analysis. Study; Within the scope of Avicenna's Temperament (Hilts) Theory, to be able to transfer the eating and drinking rules (important purpose) to this day, the productionconsumption purposes of vinegar, the indispensable compote of meat, sherbet, syrup, paste, coffee, baklava as well as ayran and even we can multiply, for example, the production-consumption purposes, the healing culture of love.
