Özet

Bu çalışma; son dönem Osmanlı Urfa’sında kahvetüketimi, kahvehanelerin işlevselliği ve müdavimlerinportreleri üzerine bir incelemedir. XVIII. yüzyılgümrük kayıtlarında kahvenin ticaretine dair verileryok denecek kadar azdı. Bu da kahvenin şehirde aztüketimine, ticaretine ihtiyaç duyulan eşsiz bir ürünolmadığına işaretti. Tüketimin artışı XIX. yüzyılatesadüf ediyordu. Kentsel doku içerisinde birçokişleve sahip kahvehaneler ise nadir sosyalleşmealanlarıydı. Resmî duyurular buralarda yapılır,sözleşmeler, anlaşmalar müdavimlerin huzurundagerçekleşirdi. Alan Mikhail’in ifadesiyle buralar;“karmaşık bir sosyal etkileşim alanı”ydı. Kumarbazmüdavimleri, tarikat ehli misafirleri eksik değildi.Seyyahlara, misafirlere mola yerleriydi. En mühimigündelik iletişimin farklı veçheleri müdavimlerintanıklığında vuku buluyordu.Dernek ve cemiyetlerin ortaya çıkışından evvelkahvehanelerde uzlaşma ve çatışma aynı andayaşanıyor, buralar yer yer politik bir alanadönüşebiliyordu. Sayılarının tedricen artışına rağmenmütedeyyin grupların tepkisi hiçbir zamandeğişmemiş, kahvehaneye bakış, her zaman olumsuzyönde olmuştu. Bulundukları çarşıya, hana vemahalleye hitap eden bu yerlerin birçoğu bir vakfınmüsakkafatı dâhilindeydi. Çarşı, mahalle ve sokaktakimevcudiyetiyle kahvehaneler, kent kimliğininmuayyen bir parçası olarak kaldı. Kahveye,kahvehaneye ve müdavimlerine dair çalışma; kadısicillerinden, Osmanlı’nın farklı idarî birimleriarasındaki resmî yazışmalardan, seyahatnamelerdenve hatıratlardan istifade edilerek hazırlandı.

Abstract

This research is based on a study of coffeeconsumption, functionality of coffeehouses andportraits of regulars in the late Ottoman Empire.In the 18th century customs records, data on thetrade in coffee was scarce. This pointed out thatcoffee is not a unique product that needs littleconsumption and trade in the city. The increasein consumption coincided with the 19th century.Coffeehouses, which had many functions in theurban fabric, were rare socializing areas. Officialannouncements, contracts and agreements weremade here in the presence of Regulars. In thewords of Alan Mikhail; It was a "complex area ofsocial interaction". Gambler regulars and sectguests were not missing. They were stopoversfor travelers and guests. Most importantly,different aspects of daily communication tookplace in the witnesses of regulars. Before the emergence of associations andsocieties, the coffeehouses had reconciliation andconflict at the same time, and these places couldturn into a political space. Despite the gradualincrease in numbers, the reaction of the piousgroups has never changed and the view of thecoffeehouse has always been negative. Most ofthese places that appealed to the bazaar, inn andneighborhood. They were within the scope of afoundation. With its presence in the bazaar,neighborhood and streets, the coffeehousesremained a definite part of the urban identity.This work on coffee, coffeehouse and its regulars;It has been prepared by benefiting from theregisters of the judges, official correspondencebetween different administrative units of theOttoman Empire, travel books and memoirs.
